Side salads don’t have to be bland. With freshly chopped chives, parsley, dill and our mustard vinaigrette this potato salad makes for a quick, easy and flavor-packed addition to the dinner table.
- Put potatoes into a saucepan and cover with water. Season with salt and bring to a gentle simmer. Cook for about 10 minutes until potatoes are tender.
- In a large bowl, whisk the mustard and vinegar together and slowly pour in the oil. Add chopped herbs and whisk together.
- Add potatoes to bowl and toss together with herbs and dressing.
- Place potatoes into a serving dish and sprinkle with green onions.
